Gluten-free Apple Loaf Cake
This is a delicious, moist apple loaf cake. Perfect for Autumn desserts or breakfast.
It is easy to make and isn't dry the next day, like some other gluten-free cakes.
Apples are good for you. Yes, they have fructose (a type of sugar), but they also have a lot of fibre so it balances out. Give them a good wash and eat the skin too. I've read that the skin contains pectin which acts as a prebiotic. So, apples are beneficial for your gut health. That is something most celiac's struggle with is our gut health.
I peeled my apples this time, but you could use them unpeeled too.

This time I started making the apple mixture first, but it is better to make the apple mixture after you've prepared the batter. That way the apples don't make a lot of liquid.
For the cake batter, add 3 medium sized eggs to a large bowl.

Then add the white sugar. Mix well with a whisk. You can also make the batter with an electric mixer or stand mixer.

Here is what the egg sugar mixture should look like.

Add the vanilla extract of your choice. I like the Only Goodness brand, but I usually have whatever was on sale in my pantry.

Add the vegetable oil and mix.

Add the milk and mix. I used 2%, but you can use 3% too. I wouldn't use skim milk as it doesn't have enough fat content for my taste buds.

Add the gluten-free flour and baking powder and blend well.

Add the lemon juice and mix. The batter is now done, and ready for the apple mixture.

Wash, peel, core and chop up the apples.
Add the brown sugar and cinnamon and mix.
This time I added the flour after the sugar and cinnamon, but you could mix the flour, sugar and cinnamon together and add all at once. I think this would be easier.
Add as much or as little of cinnamon as you like. Cinnamon pairs so well with apples. Cinnamon is also good for your health. I read it probably helps with inflammation, heart health and lowers blood pressure. Now you shouldn't go overboard. I've read that you shouldn't consume more than 1/2 to 1 teaspoon a day as very large amounts are not good for your liver.
Ideally using Ceylon ("True") cinnamon is advised as it contains less coumarin (bad for liver) than other cinnamons sold in stores.

Above is what the apple mixture should look like. Set aside about a third for topping the cake.

Add two-thirds of the apple mixture to the batter and gently combine.

Line the loaf pan with parchment paper and spray with some oil. You don't have to use oil, but I find it helps get the finished loaf out after baking.

Pour the batter in the loaf pan. Spread evenly.

Spread the remaining egg mixture on top of the batter evenly.

Gently press the apples into the top of the batter. Should look like the photo above.

Put the loaf into a preheated 350 degree Fahrenheit oven. That would be 180 degree Celsius. Bake for about 50 minutes.

The Apple Loaf should look like this when baked. A toothpick should come out clean from the centre.

While the loaf bakes, make the syrup for the top. Start by melting the butter in a small microwaveable dish.

Add the brown sugar and mix until melted.

Then add the lemon juice and mix well. Set aside until the Apple Loaf Cake is finished baking.

The syrup should look like the photo above. It may separate a little while you wait for the cake to bake. But, don't worry, just give it another stir before putting on the cake.

Brush the syrup on the cooked cake loaf. If you don't have a brush, you can spoon it over the top of the cake.

Put the cake back in the oven for 10 minutes at 350 Fahrenheit (180 Celsius).

Here is the finished Apple loaf cake right out of the oven. It smells so good. Make sure to let it cool for at least 15 minutes before removing from the pan to a cooling rack. I let it cool a further 10 minutes or more before slicing as it holds its shape better as it cools down.

I love this Apple Cake Loaf. Yummy cinnamon apples in each bite.
You can eat this cake just as it is, or with a scoop of vanilla ice cream, a dollop of whipped cream, a large spoonful of custard, or my favourite - a slice of cheddar cheese.

Ingredients
- Apples:
- 300 grams peeled and chopped apples (about 3 medium apples)
- 1 Tablespoon of brown sugar
- 1 teaspoon of cinnamon
- 1/4 cup (~30 grams) gluten-free flour to mix in with the apples
- Cake Batter:
- 3 eggs
- 2/3 cup (130 grams) white sugar
- 1 teaspoon vanilla extract
- 1/3 cup (80 grams) vegetable oil
- 2/3 cup (150 ml) milk
- 1 1/2 cup (about 180 grams) gluten-free flour for the cake batter (level flour in cup with a knife)
- 1 Tablespoon baking powder
- 1/4 teaspoon salt
- 2 Tablespoons lemon juice
- Syrup:
- 1/4 cup (40 grams) melted butter
- 2 Tablespoons (~26 grams) Brown Sugar
- 2 Tablespoons (30ml) lemon juice
Directions
- Preheat oven to 350 Farenheit (180 Celsius)
- Line a 23 x 11 cm (about 9x4 inches) loaf pan with parchment paper and spray with oil.
- Prepare the cake batter:
- Whisk the eggs and sugar until well mixed.
- Add the vanilla, oil and milk and mix.
- Add the gluten-free flour, baking powder, salt and lemon juice. Mix until well combined and set aside.
- Prepare the apples:
- Wash, peel and core the apples.
- Chop apples into small pieces.
- Mix the brown sugar, cinnamon and flour together, and add to the apples and combine well.
- Set aside about 1/3 rd of the apple mixture.
- Finish the cake batter:
- Add the 2/3rds of the apple mixture to the cake batter and combine.
- Pour into your loaf pan.
- Top with the remaining apple mixture and push the apples gently into the top of the batter.
- Bake in a 350 Fahrenheit oven for about 50 minutes.
- Add the syrup:
- When the cake is done. A toothpick comes out clean. Remove the cake from the oven and brush the top of the cake with the syrup mixture.
- Put bake in the oven for another 10 minutes.
- Remove and let cool.
Notes
- If you don't like apple chunks you could grate the apple. If grating don't add to the top of the cake, just mix the whole apple mixture into the batter.
