Gluten-free Carrot Spread/Dip

Gluten-free Curry flavoured Carrot Spread/Dip

When I have a lot of carrots to use up, I often make this delicious gluten-free carrot spread. Great on gluten-free bread, wraps, or crackers.

Ingredients:

  • Carrots - peeled and cut thinly.
  • Onion - chopped finely.
  • Orange juice - fresh or bottled.
  • Mayonnaise - make sure it is gluten-free, some mayonnaise has malt vinegar as an ingredient.
  • Mustard - I like regular plain yellow mustard, but use your favourite.
  • Curry powder - make sure it is gluten-free. I use S&B curry powder.
  • salt and pepper

You can add different flavourings. If you don't like curry powder just omit it. If you like a slight hot flavour, add cayenne pepper. Or add your favourite herb: dill, thyme or basil.

If using a microwave, put the carrot, onion and orange juice in a microwaveable safe bowl, microwave on high for about 6 to 8 minutes. When the carrots are soft, remove and drain off any remaining orange juice. Keep the juice for later.

Add the drained vegetables to a food processor, and blend until well mixed. If needed add the orange juice you set aside to thin the mixture.

Once blended it should look like the photo above. It will not be totally smooth.

If you don't have a food processor, you can use a blender, or a potato masher, or a fork.

Next add the mayonnaise, mustard, curry powder, salt and pepper, and blend until well combined.

Transfer to a bowl. It can be eaten right away, or keep in the fridge for a week.

Carrots provide fibre and beta-carotene. Onions are good too. When I was researching about onions, I was surprised to discover that they actually have a high amount of vitamin C, along with B vitamins. The orange juice provides some vitamin C.

The mayonnaise provides some protein from the eggs. Curry powder is a mix of spices that are good for you. The one I use (S&B) contains cumin, turmeric, coriander, fenugreek, chili pepper, cinnamon, fennel, ginger, nutmeg, star anise, thyme, bay leaves, cloves, sage, cardamom and orange peel. According to my research on the web, curry powder is good for gut health and may reduce inflammation.

I love this spread on gluten-free toast. It is so yummy. Bright and refreshing carrot, curry taste with a faint flavour of orange.

This is a fairly healthy spread/dip. For me, it is a nice way to start my day, along with a cup of coffee.

Ingredients

  • 1 1/2 cups cooked carrots
  • 1/2 cup cooked onion, minced
  • 1/4 cup of orange juice
  • 1/4 cup mayonnaise
  • 1/2 to 1 teaspoon yellow mustard
  • 1 teaspoon curry powder (gluten-free
  • pinch of salt and pepper

Directions

  1. Prepare the carrots and onion. Peel, wash and slice.
  2. Combine the cut carrots, onion and orange juice in a microwaveable bowl. Cover the bowl. Microwave on high for about 6 to 8 minutes. Cook until the vegetables are soft.
  3. Drain the juice off the cooked vegetables and set aside for later.
  4. Puree the vegetable mixture, adding the reserved juice as needed. I use my

  6. After the vegetable puree is cool, add the mayonnaise, mustard, curry powder, salt and pepper. Stir until combined.
  7. Chill the spread in the fridge.

Notes

  • Instead of a microwave, you can use precooked carrots and onions. Just simmer the precooked carrot and onion, in the orange juice to flavour them.
