Fluffy Gluten-Free Pancakes: Easy and Delicious
I love pancakes! Whether it's breakfast, brunch are a sweet snack, they're my go-to. Here's my favourite recipe for fluffy gluten-free pancakes - quick to make and super satisfying!
What You'll Need
For these pancakes, you'll need a few basic ingredients:
- Gluten-free flour (I use Pamela's, as it works well as a 1-to-1 substitute for regular flour)
- Baking powder
- Salt and sugar
- Butter, eggs, and oil

Why Pamela's Gluten-Free Flour?
I like to use Pamela's gluten-free flour because it's available in my area and performs well in a 1-to-1 swap for traditional flour. It makes gluten-free baking a breeze! I found mine at Save-on-Foods.
Making the Perfect Pancake Batter
This batter is easy to put together. Just combine the ingredients and mix until the batter is thick (avoid over-mixing for the fluffiest pancakes!).
Tips for Pancake Success
- Mix gently: Over-mixing can make the pancakes tough.
- Rest the batter: Let it sit for a minute before cooking.
- Look for bubbles: Tiny bubbles on the pancake's surface mean it's ready to flip!
Cooking the Pancakes
Heat up a small amount of oil in a frying pan on medium heat, then add the batter. I cover the pan with a lid to help cook the pancake evenly.
Flip the pancake once bubbles appear on the top and cook the other side until golden brown.
Gluten-Free Fluffy Pancakes (Makes 4 large or 8 small ones)
Ingredients
- 1 cup gluten-free flour
- 2 teaspoons baking powder
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 2 eggs
- 3 Tablespoons melted butter
- 3/4 to 1 cup milk

Directions
- Melt the butter and set aside.
- In a mixing bowl, combine flour, baking powder, sugar, and salt.
- Add eggs and mix, then add the melted butter. Gradually pour in milk, stirring until you reach a thick batter consistency.
- Let the batter rest for 1 minute.
- Heat a frying pan on medium and add oil before pouring in the batter.
- Cook for about 1 minute or until bubbles form on the top, then flip and cook the other side until golden.
- Serve warm with butter and your favorite toppings.
Topping Ideas for Pancakes
- Classic: Butter, maple syrup, pancake syrup, Golden syrup, granulated sugar, icing sugar
- Sweet: Chocolate chips, chocolate sauce, caramel sauce, fruit jam, berry sauces, bananas, berries, mini marshmallows
