I was craving cake, but it is just too hot to use my oven, then I remembered my Mom used to make a microwave cake. So, here is my attempt. I think it turned out well.

I don't know about you, but I think there is nothing better than a warm piece of cake. And I didn't need to turn on the oven!
This gluten-free microwave cake is yummy. It is a cross between a cake and a steamed pudding.

Ready to go in the microwave.
Easy to put together and ready in a few minutes. Similar to a microwave mug cake, just larger! The perfect size for a family dinner dessert.

Tips for the Best Microwave Cake
- Don't over mix your batter. Just mix until combined.
- Microwave power varies. Mine is 800 watts. Start with a shorter cooking time and add more if needed. Mine took 7 minutes, but start with 5 and go from there.
- The cake will continue to bake for about a minute after you take it out of the microwave, so add that time to your cooking time.
- Avoid overcooking, as this is the main reason that microwave cakes become tough.
Variations
- Cinnamon Spice Cake: Add your favourite spice such as cinnamon. Start with 1 teaspoon in the batter. A pinch of nutmeg is good along with cinnamon. Then use a cream cheese icing. Tastes like a cinnamon bun cake.
- Chocolate Chips: Add a couple of tablespoons of of your favourite chocolate or butterscotch chipits.
- Chocolate Cake: Add 2 tablespoons of chocolate powder to the batter and then fold in 1/4 cup of gluten-free chocolate chips.
- Birthday Cake: Mix in 1-2 tablespoons gluten-free rainbow sprinkles. Ice with vanilla frosting when cool and decorate with more sprinkles.
- Berry Cake: Gentle fold in your favourite fresh or frozen berries. About a 1/4 to 1/2 cup of blueberries or raspberries.
- Lemon Cake: Add the zest of a fresh lemon and 1 tablespoon of lemon juice to the batter.
- Drizzle: Use either homemade or store-bought sauce, such as caramel, hot fudge or strawberry, and drizzle on top of each slice of cake.

I like making this cake in the summer. You can make one large cake or split the batter into ramekins. If you have leftovers I recommend heating them for a few seconds in the microwave, as this improves the texture.

Ingredients
- 3 eggs
- 1/2 cup oil
- 1/2 cup of milk (or milk alternative)
- 2 teaspoons vanilla extract
- 1/4 teaspoon salt
- 3/4 cup sugar
- 1 cup gluten-free flour
- 1 1/2 teaspoons baking powder
Directions
- Oil and line a microwaveable dish with parchment paper.
- In a large bowl, beat the eggs, oil, milk and vanilla extract until well mixed.
- Add salt and sugar and combine.
- Add flour and baking powder and mix until smooth.
- Pour into your prepared baking pan.
- Bake in microwave for about 7 minutes for an 800 watt microwave.
- The cake will not brown. Cook until a toothpick comes out clean.
- Cool. Loosen sides and invert onto a plate.
- Decorate with your favourite toppings.
Notes
- I used a 9 inch (23 cm) glass pie dish.
- Cooking times will vary depending on the watts of your microwave.
