Simple Gluten-Free Peanut Butter Cookie Recipe
I have adapted my Mom's Peanut Butter Cookies to be gluten-free. I have omitted the eggs because I forgot to buy some! Without the eggs the cookies have a shortbread like texture. If you would like to make them vegan just eliminate the eggs and use a vegan butter.
Gluten-Free Peanut Butter Cookies Recipe
Ingredients
- 1 cup brown sugar
- 1 cup butter or vegan butter substitute
- 1 cup peanut butter (smooth or crunchy)
- 2 eggs (can be omitted)
- 1 teaspoon vanilla
- 2 1/2 cups of your favourite gluten-free flour
- 1 teaspoon baking soda
Directions
- Mix the ingredients in the order given above.
- Blend the softened room temperature butter, brown sugar and peanut butter, then add the rest of the ingredient and stir till well mixed.
- Line your baking sheet(s) with baking parchment paper and give a light spray of oil.
- Roll the dough in about 1 inch balls, put on the baking tray and flatten with a fork.
- Bake in a preheated 350 Farenheit oven for about 10 minutes. Then remove and carefully move cookies with a spatula to a cooling rack. The cookies are very delicate right after baking, so take care.
I love the shortbread texture that these cookies have if you omit the eggs. If you'd like to give them a chocolate flavour you can substitute 1/4 cup of the gluten-free flour with a 1/4 cup of cocoa powder. These cookies freeze well. I have often eaten them right from the freezer. If you can't consume peanut butter you can use a peanut free alternative.
