Delicious Gluten-Free Poptart Recipe
Prep: 20 minCook: 20 minMakes: 6-8 tarts
I was craving poptarts. Where I live there are no gluten-free poptarts to buy. So, as many celiacs are aware if you are craving something that you used to eat before you were diagnosied and can't find it in a gluten-free version in stores, then you will have to figure out how to make it yourself.
I used my Mom's easy pastry recipe that I adapted to be gluten-free. Here is a link to the gluten-free pastry recipe
I find that rolling the pastry between two sheets of parchment paper to be very easy. Otherwise I find that the dough sticks to my rolling pin and I have to use so much gluten-free flour to dust that the pastry becomes hard. Try to roll out the pastry quite thin.
Next using a ruler or whatever you have available measure out the dough for cutting your poptarts. Next time I will make these a bit smaller.
I used a knife but a pizza cutter would work well too to cut the poptarts out.
I wanted strawberry filling. Choose your favorite filling. Peach jam, raspberry jam, apple sauce are all good fillings. Make sure you leave space around the edges to close the poptarts.
Next you will need to seal the two pieces of dough using an egg wash. I just mix an egg with a bit of water using a fork and then use a pastry brush to paint the egg wash mixture onto the pastery. Then using a fork I press the edges together.
Ready for the oven. I preheated my oven to 350 degrees.
Bake them for about 15 to 20 minutes until they are golden brown.
Oh my house smells so good. I can hardly wait for them to cool down.
Ingredients:
- 5 cups gluten-free flour
- 1 teaspoon salt
- 1 teaspoon baking powder
- 2 tablespoons icing sugar (omit if making a savoury pastry)
- 1 lb butter (cut into small pieces or grate - keep cold in the fridge till needed)
- 1 egg (these last three ingredients are mixed together, put the egg and vinegar in a 1 cup measuring cup and stir then add enough water to make 1 cup of liquid)
- 1 tablespoon white vinegar
- water
- Jam of your choice. I like strawberry
- 1 cup icing sugar
- 1 tablespoon melted butter
- 1 tablespoon cream or milk
- 1/4 teaspoon vanilla extract
- Drop of pink food colouring
Directions:
- Preheat oven to 350F
- Make pastry as per instructions below:
- Mix the dry ingredients together.
- Cut the cold butter into the dry ingredients until it resembles fine crumbs. You can use a pastry cutter or two knives. I have always used my hands)
- Then put the flour butter mixture in the fridge to cool. Around 15 minutes to half an hour.
- In a 1 cup measuring cup put the egg and vinegar and mix with a fork, then add enough water to make 1 cup of liquid.
- Take the dry ingredients out of the fridge and incorporate the wet ingredients using a spoon at first and then your hands. Mix until you get a nice ball that holds together. Wrap in plastic and put in the fridge for about 10 minutes to cool.
- Roll out between two pieces of wax or parchment paper.
- Cut into rectangles.
- Add jam in the middle of half of the rectangles.
- Use an egg wash (egg and water mixed) on the edges to seal the tops to the bottoms.
- Brush top of the pop tarts with egg wash.
- Put the pop tarts on a parchment paper, greased baking sheet.
- Bake in a 350F for 15-20 minutes. Until golden.
- Let cool.
- When cool make the icing by whisking the icing sugar, butter, cream and vanilla extract together. Add food colouring if you like and top with sprinkles.
You can eat them as they are, but I wanted icing and sprinkles.
Just a few tips: Never use utensils that have been used with gluten. My pastry brush and pizza cutter are only for gluten-free foods. You can use tin foil or parchment paper on your baking tray and I sprayed the parchment paper with some spray oil so they wouldn't stick.
