Gluten-free Waldorf Salad
This is one of my favourite summer salads. I had quite a bit of celery on hand, so thought I would make a Waldorf Salad. This salad lasts for a few days in the fridge.

Here are the ingredients I use. I used red grapes, but green are fine too. Use whatever nuts you have on hand. Feel free to play with the ingredients: I sometimes add raisons for extra sweetness and a chewy texture.
Usually toasted walnuts are the nut of choice, but I didn't have any. I did have cashews and find that they are a nice addition. I didn't toast mine.
For the dressing I like to use plain yellow mustard, but play around with your favourite mustard. If you'd like a sweeter dressing you can omit the mustard and lemon juice, and add some whipped cream. You can serve the salad on individual plates if you like - Just place the salad on a leave of bib lettuce and serve. I choose to serve in a large dish and the family helped themselves.

The Waldorf Salad was created in 1893 at the Waldorf-Astoria Hotel in New York City, USA. For more information about this salad here is a link to an interesting article on Quaint Cookings website: quaintcooking.com.
