Yummy gluten-free tomato soup with a gluten-free grilled cheese. Perfect quick lunch!
This is a quick and easy gluten-free soup using canned tomatoes as a shortcut for a tasty, rich, comforting meal! Many store-bought canned tomato soups contain wheat flour as a thickener, this recipe is naturally gluten-free.

Basic ingredients I use for my gluten-free tomato soup.
Simple ingredients for the basic soup: Canned tomatoes, tomato paste, chopped onions, garlic and celery. For seasoning just salt and pepper and some sugar to cut the acidity of the tomatoes.

Why Use Canned Tomatoes?
They are inexpensive. Canned tomatoes are picked and canned at their peak of ripeness, so you will get a soup with a wonderful deep tomato, sweet flavour even in the winter. I always have canned tomatoes in my pantry. They are so versatile; great in soups, stews, chilis, curries and egg dishes.
Step-by-Step Instructions

- Peel, wash and chop the onion, celery and garlic. Heat oil in a large non-reactive pot over medium heat and add the onion, celery and garlic. Saute until soft and translucent (about 5 minutes). Stir occasionally to prevent burning.

Add the rest of the ingredients.
- Add the canned tomatoes (don't drain), water, tomato paste, sugar, salt and pepper. Give a stir.

Bring to a boil
- Bring to a boil and then turn the heat down to simmer. Cover and cook on low for about 15 minutes. Stir once and awhile.

Turn off the heat, and blend.
- Remove the pot from the heat and use an immersion blender to puree the soup directly in the pot until smooth.

Here is the one I use.
I prefer to use an immersion blender because I think it is safer and there is less washing up. If you don't have one you can use a standard countertop blender. If using a Standard countertop blender: it is important to let the soup cool before blending. Hot liquids expand in the blender and there is the danger of getting burnt if the soup overflows. To be safe blend in small batches with cooled soup. Reheat the blended soup later.

Serve as is or add parsley or a dash of cream.
- Serve in your favourite bowl and top with some dried parsley, or your topping of choice.
Other ingredients (optional)
This is a very simple and easy soup to make. Soups are very forgiving, so you don't need to worry if you add less or more of an ingredient. Serves 4-6 people depending on the size of your bowls. Great way to use a can of diced tomatoes from your pantry.
Below are some of the optional ingredients I sometimes add to my basic soup. Even when using fresh onion and garlic I will sometimes add the powdered versions to up the flavour. I do like using basil and parsley either dried or fresh to give the soup a boost of colour and different taste.

Below is a list of some optional ingredients you can use:
- Tomato sauce (Ketchup) 2 to 3 tablespoons, great umami flavour enhancer - gives a sweetness, and tang from the vinegar.
- Onion powder
- Garlic powder
- Basil, dried or fresh
- Chicken or vegetable broth/bouillon instead of water.
- Pinch of cloves or nutmeg (not in photo)
- Sprinkle of cayenne pepper, if you like it hot. (not in photo)
- Butter, about a tablespoon to make it a creamier soup. (not in photo)
- Paprika (not in photo)
- Cream or sour cream or plain yogurt, about 1/4 cup to make a Cream of Tomato soup.(not in photo)
Toppings
- Swirl of cream after putting soup in serving bowls.
- Fresh diced tomatoes
- Grated Parmesan cheese
- Parsley, fresh or dried
- Gluten-free croutons: (toss some cubed gluten-free bread in olive oil, garlic and onion powder and a pinch of salt, and toast in a frying pan or bake in the oven until crisp.
- Salsa
- Dollup of sour cream
- Gluten-free crackers
Soups are very versatile. Add your favourite ingredients.
I love to serve my gluten-free tomato soup with a gluten-free grilled cheese.

Love gluten-free tomato soup!
For those who have never made a grilled cheese sandwich.
You will need:
- 2 slices of gluten-free bread
- butter
- sliced cheese
- a frying pan
What to do:

1. Butter one side of each slice of gluten-free bread.

2. Put the first slice of bread butter side down in an unheated frying pan.

3. Add your cheese slice. You can make it as cheesy as you like, add another slice or a different kind of cheese. Some people like to add some thinly sliced onion here.

4 Add the top slice of bread, butter side up. Turn heat to medium and cover. Toasts quickly, so keep and eye on it. Check underneath and when toasted , flip to toast the other side. I like to give my grilled cheese a bit of a squish down with my spatula to make sure it it evenly toasted.

Finished! Enjoy as is, with gluten-free tomato soup or a dab of ketchup!
I really love tomato soup. There are a couple of gluten-free tomato soups at my grocery store, but they are cream of tomato and I like my tomato soup without dairy, so this soup is so easy to make and tastes yummy.
This soup freezes well. Will keep a month in the freezer.
Just a reminder to always double-check the ingredients list of the products you use to ensure there is no gluten. In Canada we have strict labelling laws and gluten can't be hidden. So, if there is no gluten on the label it is safe. Watch for BROW (Barley Rye Oats Wheat)

Ingredients
- 796 ml can of diced tomatoes
- 1-2 Tbsp tomato paste
- 1 cup (100-110 grams) or half a medium onion, chopped
- 1/2 cup (50 grams) celery, chopped
- 1 -2 cloves of garlic, chopped
- 1-2 Tbsp sugar
- 1 cup water
- 1-2 Tbsps oil, to fry the vegetables
- salt and pepper to taste
Directions
- Wash and chop the onion, celery and garlic.
- Saute the onion, celery and garlic in 1-2 tablespoons of oil, until soft. About 5 minutes.
- Add the canned tomatoes, tomato paste, water, sugar, salt and pepper. Bring to a boil, then lower the heat and simmer covered for about 15 minutes. Stir occasionally.
- Blend the soup with an immersion blender. You can use a regular stand blender, but be careful hot liquid expands. It is best to let the soup cool before using a stand blender and blend in small batches, then reheat the soup.
- Taste test the soup and adjust as needed. If too acidic you can add a little more sugar.
- Add any additional ingredients you like.
- Serve with a gluten-free grilled cheese or gluten-free crackers.
- Enjoy!

- Optional Ingredients: 2-3 tablespoons ketchup for an umami flavour. Dried garlic powder instead of fresh.
