Gluten-free Black Bean and Tomato Rice

Black Bean rice in a bowl with sour cream

I really love this rice dish. It is a great way to use up ingredients from your fridge, freezer and pantry. It has a Mexican/Spanish Rice vibe.

This dish is packed with protein from the black beans and cheese, and has a lot of healthy vegetables.

ingredients for black bean rice

Above are the ingredients I used. I sometimes vary the vegetables, depends what I need to use up in the fridge. You can adjust to your taste.

I don't always use salsa, sometimes I used canned chopped tomatoes. This time I had salsa and some fresh tomatoes that needed to be used.

vegetables frying

Heat up the oil in a medium to large pot. The rice will expand to about 3 cups, and then there is the vegetables, so you'll need a pot that can hold around 4 to 5 cups. Fry the vegetables until they are soft and the onions translucent.

Then add the frozen vegetables and tomatoes and fry for another 5 minutes.

rice and seasonings added

Add the beans and rinsed rice. Give it a stir.

Black beans are a great source of fibre, protein, and antioxidants. They are a low glycemic food.

salsa added

Add the salsa or canned tomatoes. Add the seasonings.

broth added

Then add the broth and give it a stir. Bring to a boil. Cover and turn to a low heat. Simmer for about 15 minutes. I stir after 10 minutes and check if it needs more liquid. Usually it is fine, but sometimes I add a 1/4 cup of water if it looks dry.

After cooked. I give it a stir, cover and let it sit for another 15 minutes. The rice will absorb the remaining liquid and continue to cook a little.

Here is what it looks like after it has sat covered for the 15 minutes.

ketchup added

I added the optional ketchup. The salsa I used was quite spicy, and the sweetness of the ketchup mellowed it out.

cheese added

Add the cheese. This will also tone down the spiciness.

Here is what it looks like as you stir in the cheese.

It is now ready to serve.

I often serve the rice topped with sour cream or greek yogurt or mayonnaise. Along with guacamole or sliced avocado.

I sometimes add side dishes such as a salad, chicken, or pork. You can also add fried minced beef or pork to the rice if you like.

Great on its own or in a gluten-free burrito the next day.

Enjoy!
